Indian chef preparing authentic cuisine in the restaurant kitchen

About Indian Grill N Curry

Our Story, Tradition, and Passion for Indian Cuisine

From a small kitchen on Lahaina's Front Street to a family-run table in Kihei, our story is one of resilience, tradition, and a deep respect for Indian cooking.

Our Story

A Restaurant Built Twice, With the Same Heart

Indian Grill N Curry opened on Lahaina's historic Front Street in 2019, founded to bring honest, unhurried North Indian cooking to Maui. Word spread quickly — not because of marketing, but because of the food: slow-built gravies, fresh-baked naan, and tandoor-grilled kebabs cooked the way they're cooked in North India.

In 2023, our original restaurant was lost. What didn't change was the team, the recipes, or the commitment to this island. We rebuilt in Kihei, on Maui's South Shore, and reopened our doors to a community that welcomed us back with open arms. Every dish on our menu today carries that same recipe book — and a little more gratitude than before.

Mission & Values

Cooking With Intention, Serving With Warmth

Our mission is simple: cook the way Indian food deserves to be cooked, and treat every guest like they've been invited to our own table.

  • Never cut corners on spice or technique
  • Welcome every guest regardless of dietary need
  • Support and hire from our local Maui community
  • Keep recipes rooted in tradition, not trends

Integrity

Honest sourcing and honest cooking, every service.

Hospitality

Every table is treated like a guest in our home.

Freshness

Nothing pre-made, nothing rushed.

Tradition

Recipes that haven't been shortcut for convenience.

Our Philosophy

Authentic Indian Cooking Philosophy

We believe Indian food is built in layers — spice bloomed in hot oil, onions caramelized past the point of impatience, and gravies given the time they need. Nothing on our menu is a shortcut, and every dish is finished to order, not held under a heat lamp.

Ingredients & Spices

Fresh Ingredients, Ground In-House

Whole spices are roasted and ground fresh at the restaurant, not sourced pre-mixed. Produce, herbs, and proteins are ordered to be used within days, not weeks — and our meats are prepared to halal standards throughout the menu.

  • Whole spices roasted and ground in-house
  • Halal-sourced meats
  • House-made paneer and chutneys
  • Vegetarian and vegan dishes made from scratch

Traditional Recipes

Recipes Rooted in North Indian & Nepalese Kitchens

Our menu leans into North Indian classics — tandoori grilling, rich Mughlai gravies, dum-steamed biryani — alongside Nepalese-style momos and chilli dishes that reflect our kitchen team's own roots. Nothing is adapted to be milder or faster; it's cooked the way it's meant to be.

Meet the Kitchen

Led by Chef Javed

Our kitchen is led by Chef Javed, who has guided the restaurant's recipes since our first location in Lahaina. His approach blends classic Punjabi and Mughlai technique with the comfort of Nepalese home cooking — a reflection of the diverse culinary backgrounds represented in our kitchen.

Every new team member trains directly at the tandoor and the stove before ever plating a dish for a guest.

Tandoor-Trained

Every cook trains hands-on at the tandoor.

Recipe-Led

Recipes carried from our first Lahaina kitchen.

Frequently Asked Questions

Yes. The restaurant is run day to day by the family and kitchen team that founded it in Lahaina in 2019.

We roast and grind whole spices in-house rather than using pre-mixed blends, and source proteins prepared to halal standards.

Yes, our dining room and lanai seating can accommodate groups; for parties of six or more we recommend calling ahead.

Our clay tandoor reaches very high, consistent heat, which is what gives our naan its char and our kebabs their smoky depth — a method we've used since day one.
